Growing my own microgreens - a nod to good health and Veganuary

Microgreens are the seedlings, usually consisting of the first pair of seed leaves, of various vegetables and herbs.  Beloved by chefs for enhancing the visual appearance, texture and taste of dishes, they are also a great way to get an extra veg hit in the darkest days of winter.  They're high in carotenoids, vitamins C, K and E according to US research published in 2014.  So with a nod to good health, Veganuary and the purse strings, I've decided to try out Johnsons Microgreens growing kit.

The kit consists of a clear tray for holding a reservoir of water onto which 2 perforated growing trays fit.  3 packets of seeds are included, sweet basil, rocket and coriander. 

How to use: Simply cut some kitchen towel to fit the growing trays, sprinkle the seeds evenly over the surface and place the trays over the water filled container.  Spray the seeds with water using a mist sprayer 2-3 times a day until the roots of the seedlings reach the water reservoir.  Harvest when the seedlings are around 5cm high.  Easy.
